Slow Food Philadelphia and PASA seminar: “Where’s the Beef (and Pork and Lamb)”
Marilyn Anthony of PASA along with a panel that will include Jessica Moore of Philadelphia Cowshare, a local meat CSA and a group of PASA member farmers who provide superior meats in our region will talk about humanely raising and bringing meat to market. Guaranteed to be a meat lovers treat! Food sampling and wine included. If you are interested in stocking up your freezer, after the seminar there will be meat products for sale. Linda will be there to talk about High View Farm, sample some of our products as well as sell our lamb meat. The seminar will be held at the Restaurant School of Philadelphia. Early January will see the release of a wonderful new book written by chef and author Aliza Green. It is a comprehensive guide to meat and butchering called "The Butcher’s Apprentice". Aliza, a fabulous chef in her own right, traveled around the country interviewing butchers and meat farmers to complete this comprehensive guide to buying, butchering and cooking a variety of meats. High View Farm was lucky enough to be one of the farms she visited and wrote about.
