Apple Chutney
Ingredients:

1 cup brown sugar 1 cup cider vinegar 3 crisp Apples, peeled, cored and rough diced 1 large sweet onion, rough diced 1 lemon (trim the ends, cut in half crosswise, seed and dice) 1 jalapeno, diced |
1 cup raisins 1/4 cup candied ginger, diced 1/2 tsp cinnamon 1/4 tsp whole mustard seed 1/2 tsp cloves 1/2 tsp nutmeg 1/2 tsp kosher salt |
Preparation:
In a medium stainless steel sauce pan combine all ingredients and mix well. Place the saucepan over medium heat and bring to a simmer. Lower the heat and simmer until all fruit is stewed but still firm. Remove from the heat ---- cool then refrigerate. The flavor improves if it is allowed to stand for a few days before serving.
