Pigs and Pork

All of our hogs are raised humanely, given the best of feed, and are not treated with medications or growth hormones. The piglets are bred and born on carefully selected, small local farms in the area. They come to our farm when they are about 10 weeks old, weighing about 12 lbs and leave when they reach around 325 lbs(some times smaller if they are going to pig roasts). In between that time they run and play in the mud and live good pig lives eating all of the corn, soy beans and green matter that their hearts desire.

Special attention is given to their finishing diet to develop special taste components. Some pigs are fed sour mash, others finished in the fall are fed ground fall apples by the bushels. All of these flavors are important to the development of the final taste of the meat. We continue to strive to develop that perfect pork chop! The bonus here is that the pigs love these special meals as well.

Highview Farm's production is limited because we care about our products, our animals, and our friends who consume them. Our hogs are processed by one of New Jersey's few remaining family owned butchers, We are pleased to say that our circle of friends has recently grown; you can now find our pork and lamb individually packaged for retail sale at the Whole Earth Center in Princeton, New Jersey.

A few months ago, Sugar Mountain Farm published an article entitled "What is a Half Pig Share" that describes the cuts of meat they obtained from one of their pig halves: "About 23 pork chops from a half pig, 2 roasts, 1 fresh ham, 8 lbs of fresh bacon slab, 3 lbs of spare ribs, 9 lbs of ground pork, etc totaling about 75 lbs in the freezer for this half pig. That was a little on the high side. Most pigs are between 60 and 70 lbs for a half share."
